1 ½ cups almond flour
¼ cup coconut oil, melted
¼ cup maple syrup or agave
1 tsp vanilla extract
2 tbsp vegan protein powder (vanilla or unflavored)
1–2 tbsp mini dark chocolate chips (75–85% cacao)
1 or 2 dropper minty-nutty CBD tincture (adjust per dose)
Pinch of salt
Optional: 1 tsp cinnamon or nutmeg
Instructions:
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a bowl, combine almond flour, vegan protein powder, salt, and optional spices.
Mix in melted coconut oil, maple syrup/agave, vanilla, and CBD tincture until smooth.
Fold in chocolate chips.
Scoop cookie-sized portions onto the baking sheet and gently flatten.
Bake for 10–12 minutes until edges are lightly golden.
Cool for 5 minutes on the tray—cookies will firm up as they cool.
